Recipes from the Heart

We all know how important breakfast is and here is a recipe for “Bacon, Egg & Cheese Breakfast Casserole” that you can put together the night before.  Send your kids off to school knowing that they ate a hearty breakfast.

4 slices white bread, crusts removed           ½ teaspoon dried minced onion

4 eggs, slightly beaten                                 8 slices bacon, cooked and crumbled

½ cup milk                                                 1 cup (4 ounces) shredded mild cheddar cheese

1 teaspoon dry mustard

The Night Before:  Place the bread in a lightly greased 8 inch square baking dish; set aside.  Combine the eggs, milk, dry mustard, and dried minced onion; pour over the bread.  Sprinkle bacon over the casserole; cover and refrigerate for 8 hours.

The Next Morning:  Preheat the oven the 350 degrees.  Remove from the refrigerator; let the casserole stand 30 minutes.  Bake, covered, for 20 minutes.  Uncover the casserole, sprinkle with shredded cheese, and bake an additional 5 minutes.  Let the breakfast stand 5-10 minutes before serving.

For this and other great recipes such as “Pigs in a Blanket”, “Impossible Cheeseburger Pie”, Gluten Free Pancakes”, “Ice Blocks” and much more, click on this link (www.cafepress.com/fndfl) and order FND’s Recipes from the Heart.  Proceeds will go to FND and help us continue our mission of serving families of children with disabilities.
